I love to make these because they are a fun copycat to the mini packaged Hostess donettes I used to love as a kid. They are mini so they are easy to pop in your mouth in one bite! They are so easy to make, and option to either roll in a powdered sugar or sweetener or melted chocolate to make them that true cake donut! Or heck just do both. They are made without refined sugar, gluten or dairy and safe on a low FODMAP diet! The perfect coffee dunk.
These donuts are dairy free, using dairy free milk but do require eggs. I have not tried to replace the eggs but I think you could use applesauce in replacement or a flax egg. Keep in mind flax eggs may make the donuts a little denser.
Non Dairy Milk, I use oat milk
Coconut Sugar or Granulated Sweetener
Baking Powder
Cinnamon
Vanilla Extract
Sea Salt
Eggs
Avocado Oil or Neutral Oil
Powdered Sugar or Powdered Monkfruit
Paleo Dark Chocolate
Coconut Oil
I used Bob's Red Mill 1:1 All Purpose Gluten Free Flour, I have not tried any other flour blends but I think King Arthur 1:1 Gluten Free would work just as well.

I like coconut sugar as my sweetener of choice but any granulated sugar will work in this recipe.
I prefer avocado oil as an unsaturated oil in my baking because it's a lot healthier than vegetable oils, but you can use any neutral oil in this recipe. If you use coconut oil, make sure it's melted and cooled first.
You can roll mini donuts in unrefined powdered sugar. To make this, place any granulated sweetener or sugar in a high speed blender for 30 seconds. You can use coconut sugar, monkfruit, or your favorite sugar of choice.
Yes! Just up the baking time to 18-20 minutes. You can also make these into muffins if you do not have a donut pan.
Mini donut pan, I used this one (you can use a full size pan as well)
Whisk
Microwave or stovetop for melting chocolate
1. Prep the donut pan by spraying it well with cooking spray.
2. Whisk together all ingredients into a batter.
3. Spoon into baking pan 2/3 the way up and bake for only 8 minutes!
4. Dip or roll the donuts in powdered sugar or melted dark chocolate.
5. Enjoy with tea or pop one in your mouth for a quick snack or dessert.
