Bomb Pop Rocket Popsicles (Vegan, Paleo)

YES, BOMB POPS!!!


Who used to love bomb pops? I remember when the ice cream man came by our house in the summer, I'd always get a huge bomb pop. I loved all the different flavors and the shape of the pop. Well, this this year I was inspired to make these childhood favorites when I found these cute molds by Tevalo, and 4TH OF JULY of course! It's my favorite holiday, being a summer girl, and I was pretty sad about no fireworks or celebrations this year. So I had to find a way to be festive and being some America to my day.



Ingredients in these Bomb Pops:


Coconut milk: A paleo base for the pops. Coconut milk is creamy so gives these a nice texture, and some good healthy fats


Sweetener of choice: I used honey but any will work here. I just wanted my pops to be bright in color so used light honey


Berries: This is what colors and flavors your pops so every color is different


Lemon juice: This is what flavors the white color. True to the real bomb pops! It’s the best one in imo.




Ingredients:


Blue layer:

1/2 cup of canned coconut milk

1 tbsp of sweetener

1/2+ cup of blueberries.


White layer:

1/2 cup canned coconut milk

2 tbsp fresh squeezed lemon (and some pulp)

1 tbsp sweetener


Red layer:

1/2 cup canned coconut milk

2 cup of any red fruit (I used strawberries/raspberries but cherries would be the OG!)

1 tbsp sweetener.


Blend the blue together first in a blender. Pour 1/3 up your popsicle mold (any will work) and freeze for 20 minutes until just set. Repeat with the white layer. And then the red layer, adding the popsicle sticks in about 10 minutes into the red layer setting so they will hold up and freeze straight. Freeze until set, pop out of moulds and store in an airtight container. Enjoy on a hot day!



*Recipe notes:


- If you don’t like coconut, you can add 1/2 cup of plain yogurt instead, adding about 1-2 tbsp of milk to each color to thin it out a bit. They’ll be creamier than the coconut milk!
